The Story Behind Flavorings: Are They Safe to Eat?
Are food flavorings harmful to the human body? And in what foods are they hidden? Today, let's delve into the world of food flavorings and explore how to scientifically understand and reasonably choose foods containing them. Misunderstandings and Precautions Regarding Food Flavorings 1. Correct Understanding: Food flavorings are additives specifically used for food flavoring that have been approved by the state. Their main purpose is to enhance the taste and flavor of food. Used within the prescribed dosage, they are generally safe for human consumption. 2. Usage Precautions: Moderation Principle: Although food flavorings themselves are non-toxic, excessive intake may burden the body. When purchasing food, prioritize products that do not contain or contain less flavoring, especially for children and people with a history of allergies. Choosing Compliant Products: When purchasing food, pay attention to the labels on the packaging to ensure that the flavorings used in the purchased food are added within the nationally permitted limits. In What Foods Are Food Flavorings Commonly Found? 1. Processed Foods: Food flavorings are widely used in various processed foods, such as candies, pastries, beverages, instant noodles, frozen foods, baked goods, etc., to enhance the aroma and taste of food. 2. Seasonings: Many seasonings, such as chicken essence, hot pot bases, dips, and pickled foods, also add food flavorings to mimic the taste of specific ingredients and enhance the overall flavor. 3. Puffed Snacks: Crispy and delicious puffed snacks, such as potato chips, shrimp chips, and corn sticks, often use added flavorings to create an attractive aroma and appeal to consumers' palates. In summary, food flavorings, as commonly used additives in the modern food industry, are relatively safe for human consumption as long as they are used in accordance with national standards. However, given the potential risks associated with food additives, we still advocate that everyone develop the habit of reading food labels, try to choose natural ingredients, and reduce reliance on processed foods. While enjoying delicious food, we should also pay attention to the diversity and balance of our diet, allowing health and deliciousness to coexist.

Two misunderstandings about edible flavors
First, food should not contain artificial flavorings, or adding artificial flavorings is bad. With the improvement of modern living standards and the acceleration of the pace of life, people increasingly prefer convenient processed foods and expect them to have delicious and diverse flavors, which can only be achieved by adding food flavorings. Second, foreigners do not eat or rarely eat foods with added food flavorings. Food flavorings are "imported goods", and the more developed the country, the higher the per capita consumption of food flavorings. China's per capita consumption of food flavorings is far lower than that of developed countries and regions such as the United States, Japan, and Western Europe.

Are edible spices and flavors food additives?
Both edible flavors and fragrances belong to food additives, and their use must comply with the provisions of the "National Food Safety Standard—Standard for the Use of Food Additives" (GB2760). Only substances that have undergone safety evaluation and will not harm consumers' health, and are necessary in food processing, can be used as food additives! Legally used food additives, used within the limits stipulated by the state, can be considered harmless for long-term consumption, while the use of illegal food additives and the overuse of food additives are illegal. At the same time, China has also formulated separate national food safety standards for edible flavors and fragrances. As we all know, food safety standards are mandatory standards. With the protection of these standards, we can further regulate the production and operation of enterprises and ensure the food safety of consumers.

Why do some people enjoy carbonated drinks? Carbonated drinks are beverages infused with carbon dioxide under specific conditions, commonly known as "soda". Carbonated drinks do not contain alcohol and are considered soft drinks. They are a major product in the soft drink category and come in various flavors such as juice-type, fruit-flavored, and cola-type. Because carbonated drinks contain a certain amount of carbonic acid, when consumed, the beverage decomposes due to increased temperature and decreased pressure, releasing carbon dioxide gas. The gas carries away some of the body's heat, making one feel cool and refreshed. Burping after drinking carbonated beverages is the result of this carbon dioxide gas being expelled. As the carbon dioxide gas is expelled, it carries with it the aroma and creates a spicy, stimulating sensation in the mouth. Does the fruit flavor in carbonated drinks come from real fruit? Of course not. The fruit flavor comes from fruit essences synthesized from chemical monomers, and has nothing to do with natural fruit. For example, the orange flavor in orange-flavored carbonated drinks comes from orange essence. Orange essence is made from chemical ingredients such as sweet orange essence, citral, ethyl butyrate, glycerin, and linalool.

The importance of food flavorings
The fragrance industry is characterized by a vast array of products and rapid innovation. Industry experts believe that to thrive in this competitive market, fragrance manufacturers must continuously develop new products. In the process of new product development, edible fragrance companies should operate according to customer needs. Before developing new products, fragrance company personnel must conduct thorough research in food companies and supermarkets and shopping malls that sell food, carefully listening to customer feedback. Taking the development of fruit juice flavorings as an example, fruit juices are rich in nutritional value, come in many varieties, and have high consumption; the application of high-quality flavorings contributes to the development and sales of fruit juices. To meet the needs of the diverse fruit juice production, edible fragrance companies actively develop a series of fruit juice flavoring products, including peach flavor, orange juice flavor, blackberry flavor, strawberry flavor, pineapple flavor, apple flavor, lychee flavor, mango flavor, lemon flavor, etc. Orange juice flavor is widely used and has been a popular flavoring in the production of juices, beverages, jellies, ice cream, and other foods for decades. Human resources are an indispensable key element in the development of fragrance companies. Only with high-quality personnel can a company develop sustainably. To develop high-quality fragrances and provide high-quality services to food companies, fragrance companies should actively cultivate and recruit a variety of high-quality personnel, including perfumers, food development engineers, quality inspection engineers, and business personnel with rich marketing experience. Improving the Quality of Fragrance Products For edible fragrance factories to expand their scale and increase profits, they must produce mid-to-high-end products and improve product quality. If they continue to produce low-end and uncharacteristic fragrances, the profit margin will be small, and they will never be able to escape the predicament of low-price competition and long-outstanding payments. High-quality fragrances should have the following characteristics: exquisite materials, pure aroma, good temperature resistance, high stability, and long-lasting fragrance. Fragrance companies, with their high-quality mid-to-high-end products, can more easily communicate with large and medium-sized food companies. Once a fragrance company's high-quality fragrance products enter large and medium-sized food companies and are recognized and used by them, the usage volume is large, and they can be used for a longer period of time. In this way, the scale of such fragrance companies can easily expand, their production and sales can quickly increase, and the product profit will be higher than that of low-end products. Providing Efficient Technical Services Providing high-quality and efficient services to food companies helps enhance the competitiveness of edible fragrance companies and break through the siege of low-price competition. To provide good service, fragrance companies should establish an application technology department and equip it with professional technical service personnel. These application technology service personnel should be food professional engineers with rich knowledge and experience in food processing, technology, and fragrance application. After the fragrance company's sales representatives contact the customers, their technical service personnel should immediately follow up and introduce the characteristics and usage points of edible fragrances to the customers. Because edible fragrances have a wide variety of types, complex aromas, and different uses, the technical personnel of general customers (food companies) are not very familiar with the identification, use, and process control of fragrances. The application technology service personnel of fragrance production companies provide on-site technical services to customers, which is particularly important for the promotion of fragrance products. Before each product of the fragrance company is launched onto the market, it must undergo application experiments according to the corresponding procedures, so that the application technology service personnel can be familiar with the performance, application fields, addition amount, and application process of the fragrance products. In addition to guiding customers on the use of their own company's fragrance products, edible fragrance companies can also help customers develop food products according to customer needs. Some food companies have weak new product development capabilities, and they sometimes purchase some popular new products from the market and give them to fragrance companies, requiring the latter to provide technical support in the development of these products. In this situation, the fragrance company should treat the customer's requirements as its own and quickly organize perfumers, application technology service personnel, and sales representatives to carefully analyze the properties of the food samples, propose corresponding development plans, conduct experiments, explore ideal process technology and formulas, and help customers solve problems. The competition in the edible fragrance market is no longer simply a competition between products, but a competition between comprehensive factors such as product quality, service, and brand. The promotion of edible fragrances is inseparable from the technical services provided by the production enterprises. Carrying out application technology research, understanding customer needs, and providing supporting services to customers have become important supporting measures for edible fragrance marketing.

Oranges, lemons, strawberries, cherries, grapes... Perhaps it's because seeing fruit-flavored drinks reminds us of the natural fruit aromas that bring back fond memories. When shopping, seeing a dazzling array of fruit-flavored drinks, it's always hard to resist trying them. After opening the bottle and taking a sip, however, I suddenly become sober and start to doubt. Although the taste is 90% similar, compared to real fruit, the drink tastes somewhat similar, but not exactly the same. What's going on? The History of the Development of Food Flavorings If you check the ingredient list of fruit-flavored drinks, you'll find that the vast majority do not contain the corresponding fruit juice or fruit pieces, but rather artificial food flavorings that mimic the taste of a certain fruit. People's use of natural fragrances can be traced back more than 5,000 years, but food flavorings made from natural or synthetic fragrances have only a history of about 150 years. Everyone loves natural scents, and natural scents are indeed abundant, but from a scientific and technological point of view, there are very few natural fragrances that can be directly extracted from plants and animals and widely used in food. With the improvement of living standards, people's requirements for food taste are also getting higher and higher. Only food with rich and varied flavors can attract consumers. Today, the varieties and quantities of food flavorings used for daily needs have far exceeded the types and output of natural fragrances. Moreover, in some cases, people's requirements for the taste and aroma of food have also exceeded the flavoring capabilities of natural fragrances themselves. For example, adding some lemon juice to beer or cola to give these drinks a lemon flavor is still within the scope of what natural fragrances can support, but if you want to taste "cherry blossom cola", "hot pot mutton-flavored potato chips", or "grapefruit chili chocolate", it is obviously not something that conventional natural fragrances can easily produce. Therefore, gradually, food flavorings, as a huge supplement to natural fragrances, with the advantages of acceptable cost, controllable concentration, and achievable technology, have become an indispensable important additive in the food industry. Although the dependence on food flavorings is not very acceptable to people, a closer look reveals that in modern society, except for fresh fruits, vegetables, meat, eggs, milk, almost all other foods have long been inseparable from various food flavorings. Why Doesn't It Taste Like Real Fruit? The orange, lemon, and strawberry-flavored drinks we often drink are not that different from the taste of real fruit, and the public acceptance is quite high. But some less common flavors, such as cherry-flavored drinks, can't even be said to be exactly the same as the taste of cherries; they are completely irrelevant. Some people think it has a smell of paint, while others think it's a bit like bitter almond, and although subjective feelings vary, none of them think it's the taste of the cherry fruit we remember. So some people complain, we have already accepted food flavorings in terms of food safety, but can't we make the food flavorings taste more similar? It's undeniably a bit difficult. Because the composition of natural fruit aromas is very complex, there are dozens of chemical components, and if all of them are artificially prepared according to the proportion of nature, the cost will be too high, so perfumers usually only focus on a few main components to prepare the flavoring, and it is not surprising that the flavor is not exactly the same as the natural fruit flavor. Can the Taste of Food Flavorings Be Improved? With the development of science and technology, the taste of food flavorings can certainly be improved to make it closer and closer to the imitated taste, but this may require long-term and continuous efforts. According to relevant experts, China's flavoring industry's technological level is about 20 years behind that of foreign counterparts. Many flavorings need to be purchased from abroad at high prices, so the cost of the prepared food flavorings goes up, and then the flavor has to be reduced. On the one hand, technological limitations prevent the confirmation of the structure of the main components of a certain flavor; on the other hand, even if it is confirmed, due to cost control, many kinds of flavorings will not be used for preparation. In addition, the scarcity of perfumers is also a problem. The research and development of new flavorings relies entirely on the preparation of perfumers, and the cultivation of perfumers requires not only investment of time and money, but also depends on the person's talent. According to an interview with Professor Sun Baoguo of the Fragrance and Flavoring Specialty at Beijing Technology and Business University, this specialty has been around for more than 40 years, and the school only has "two and a half" people who can be called perfumers (title), who are students trained by professors, and the professor jokingly said that he is not a perfumer and is far worse than a perfumer. The process of developing a new flavoring and finally applying it to a product is also time-consuming, generally taking about two years. First, food safety must be ensured to prove that the new flavoring is harmless to the human body; then, perfumers develop new flavored products according to market demand; then, food processing plants produce samples; samples need to be trial-marketed, and consumers need to try and give feedback. If consumers think the product tastes good and have a desire to buy it, then the food factory will order flavorings from the flavoring factory, and the flavoring factory will order flavorings from the flavoring factory. In short, the development and improvement of food flavorings not only require technological progress and talent cultivation within the industry, but also depend on the development of the entire industrial chain. In the past, people only had a single, monotonous choice of beverage flavors, but now there is a dazzling array of different fruit-flavored beverage choices, which is inseparable from the development of food flavorings in beverages; it continuously enriches the taste of food, satisfies everyone's better life, and sometimes the taste experience may be unsatisfactory, but let's give its development and progress more time and patience.

Development of edible flavors in recent years
Food flavorings are the foundation for the development of food essences, with development focusing on natural and/or nature-identical flavorings. Domestically and internationally, a large number of new nitrogen-, sulfur-, and oxygen-containing heterocyclic food flavorings have been synthesized, such as pyrazine, thiophene, and furan compounds, and further formulated into different essences for use in various convenience foods and artificial foods such as artificial beef, pork, chicken, and seafood, promoting the development of the food industry. Food essences are various types of essences with natural flavors, carefully blended from natural and nature-identical flavorings and synthetic flavorings, referencing the aroma of natural foods. These include various essences such as fruit (aqueous and oily), dairy, poultry, meat, vegetable, nut, candied fruit, emulsified, and alcoholic essences, suitable for use in beverages, biscuits, cakes, frozen foods, candies, seasonings, dairy products, canned goods, and alcoholic beverages. Food essences are available in liquid, powder, microcapsule, and paste forms. Management System Management System ---- A combination of unified management and division of responsibilities. The scale of China's flavor and fragrance industry market has reached 70 billion yuan
The fragrance and flavoring industry in China faces numerous challenges and difficulties in its development, and urgently needs government guidance, policy support, and social empowerment. It also greatly desires information sharing for common development and growth. This was stated recently by Qi Lian, chairman of the China Forestry Industry Association's Fragrance and Flavoring Sub-association, at the first World Forestry Congress 2023 Fragrance and Flavoring Industry Development Forum and the first annual meeting of the Fragrance and Flavoring Sub-association, held in Nanning, Guangxi Zhuang Autonomous Region. This forum, themed "Beautiful China, Healthy China, Fragrant China," aimed to promote exchange and cooperation in the fragrance and flavoring industry. More than 400 people attended the meeting, including officials from the State Forestry and Grassland Administration and various levels of local governments in Guangxi, industry experts and scholars, and business representatives, to discuss the development path of the fragrance and flavoring industry. Jin Min, head of the leadership group for the change of the China Economic Forestry Association, said that the fragrance and flavoring industry is an important resource-based industry, a high-tech industry, and a sunrise industry. Since ancient times, spices have been an important part of China's Silk Road trade. In recent years, the fragrance and flavoring industry has become an important bridge and major export-oriented industry for cultural exchange, trade, and economic cooperation between China and countries participating in the Belt and Road Initiative. It is a vivid example of transforming "green mountains and clear waters" into "mountains of gold and silver," and a typical demonstration of ecological industrialization and industrial ecologization. It is understood that the global international fragrance market is booming, with an average annual growth rate far exceeding the global average economic growth rate. The output value increased from 17.2 billion yuan in 2015 to 250.7 billion yuan in 2022. China is the largest producer of natural fragrances, with a complete range of natural fragrance plant varieties and abundant resources, including more than 400 types of fragrance plants. Currently, more than 120 types of natural fragrances are produced. China has many unique varieties such as cassia and star anise, and natural fragrance varieties with unique advantages globally. Approximately 1/3 of fragrance and flavoring products are exported annually, with about 2/3 of fragrance products exported. The export volume of vanillin, linalool, and maltol accounts for about 50% of the global supply. The market size of the national fragrance and flavoring industry has reached 700 billion yuan, accounting for nearly 1/3 of the world's industry output value, and maintains a high-speed development momentum with broad prospects. Zhou Hongsheng, head of the leadership group for the change of the China Forestry Industry Association, said that the fragrance and flavoring industry is the most effective path to realize "lucid waters and lush mountains are invaluable assets" and the most effective path to realize the value of forest ecological products. Promoting the development of the fragrance and flavoring industry can fully enhance the attractiveness of forest resource assets to social capital and is one of the most effective means of ecological utilization and protection. At the same time, the development of the fragrance and flavoring industry is of great significance to promoting common prosperity for farmers and rural areas, contributing to the modernization of agriculture and rural areas, and promoting harmonious coexistence between humans and nature. However, "the development of China's fragrance and flavoring industry is still relatively primary, with many industry pain points." Yang Chao, chairman of the China Green Carbon Sink Foundation and former chief economist of the State Forestry and Grassland Administration, said that there is no unified management department, no unified quality standards, lack of scale, and no standardized trading platform, among other issues. Participants generally believed that China's fragrance and flavoring industry still faces problems such as insufficient industry support, backward extraction methods, lack of core competitiveness and innovation ability, lagging selection and promotion of new varieties, low industrial concentration, and serious homogeneity. At the same time, China's fragrance and flavoring industry is in a young and rapidly growing stage. The next few years will be a period of significant improvement in the technical level, major adjustments in capital structure, and major changes in business concepts in China's fragrance and flavoring industry. Lai Ming, a member of the Standing Committee of the 14th National Committee of the Chinese People's Political Consultative Conference and former vice chairman of the Central Committee of the Jiu San Society, proposed in a speech titled "Analysis of the Development Trends of the International and Domestic Fragrance and Flavoring Industry": strengthen overall planning and macro-guidance, formulate a national special plan for the fragrance and flavoring industry, increase industry support, develop fragrance and flavoring into a leading industry, and create a Chinese-characteristic fragrance and flavoring industry cluster; promote the integrated development of the primary, secondary, and tertiary industries, increase investment in the exploration, selection, and promotion of plant varieties, combine with Chinese traditional culture for image building, and promote industrial upgrading; build a deeply integrated service system, increase credit support for the fragrance and flavoring industry, build a high-end R&D talent team, improve the technical level of the fragrance and flavoring industry, and focus on solving "stuck neck" problems; give full play to the strength of universities and research institutes, and establish a fragrance and flavoring industry research institute; strengthen market system construction, cultivate leading enterprises, create well-known brands, and promote high-quality development of China's fragrance and flavoring industry. Sun Baoguo, an academician of the Chinese Academy of Engineering and chairman of the Chinese Institute of Food Science and Technology, pointed out in his keynote speech that innovation is the core competitiveness of the fragrance and flavoring industry. He proposed four points of emphasis: attach importance to the selection and breeding of natural fragrance plants, attach importance to the deep processing and comprehensive utilization of natural fragrances, attach importance to the artificial synthesis of bulk fragrances, and attach importance to the production and use permits for food fragrances. The forum also held a ceremony for the establishment of the ASEAN Fragrance and Flavoring Trading Platform, a ceremony for the establishment of the Fragrance and Flavoring Industry Research Institute, and a launch ceremony for the documentary "Smelling the Fragrance of China." Thirteen participating companies read out the "Proposal for Promoting the High-Quality Development of China's Fragrance and Flavoring Industry." China Quality News

Correct Understanding of Food Flavorings
Food flavor is short for food flavoring, which is a mixture that can impart flavor to food. Consumers do not need to worry about safety issues caused by excessive use of food flavorings and fragrances. Food flavorings also have a 'self-limiting' property when used; when exceeding a certain amount, their aroma becomes unpleasant.
